Smoked Sweet Potatoes

The fall count down is on! Add these delicious and amazing Smoked Sweet Potatoes to your Thanksgiving dinner table. Incredibly easy to prep, the smoker does all the work! The flavor of these sweet potatoes are so much more enhanced by smoking them compared to cooking them in the oven. If you have access to a smoker I highly recommend giving these a try, and if not they are great in the oven too.

Open these Smoked Sweet Potatoes up when they are hot off the grill . Add butter, cinnamon, chopped pecans, and top them off with mini marshmallows. Right before you put them back on the grill coat the skin with more butter and rub with brown sugar. Smoke for an additional five minutes to get the mini marshmallows gooey and lightly brown.

Smoking sweet potatoes this way will have you enjoying them more than just once a year.

Smoked Sweet Potatoes

Ingredients

  • 4 Sweet Potatoes
  • 1 Stick Butter
  • 4 oz Chopped Pecans
  • 6 oz Mini Marshmallows
  • 1/4 cup Brown Sugar
  • Cinnamon pinch

Instructions

  1. Wash and scrub potatoes. Pat dry.

  2. Coat potatoes with butter.

  3. When ready to cook, start your smoker. I use a Traeger so I start on the smoke setting with the lid open for about five minutes. Once the fire has established close the lid and set temperature to 375 degrees and preheat, lid closed, for about 15 minutes. 

  4. Place the sweet potatoes on the grill grate and smoke until soft, 1 - 1.5 hours depending on the size of your sweet potatoes. 

  5. Once sweet potatoes are soft remove from the grill. Coat with more butter and cover with brown sugar. Slice the center of the sweet potato and press on the sides to create and opening. Stuff each sweet potato with butter, brown sugar, cinnamon, sliced pecans, and marshmallows. In that order. 

  6. Return to the smoker for about five minutes, or until marshmallows are lightly browned.
