Sheet Pan Pork Chops and Potatoes

Ingredients

  • 4 Pork Chops bone in
  • 2.5-3 lbs Red Potatoes cut into chunks
  • 2 cloves Garlic minced
  • 1/2 Onion chopped
  • 1 Green Bell Pepper chopped
  • 1 Red Bell Pepper chopped
  • 1/4 cup Olive Oil
  • 1/2 stick Butter melted
  • 1/2 tsp Cayenne Pepper
  • Kosher Salt
  • Freshly Ground Black Pepper
  • Seasoning Salt Lawry's
  • Garlic Powder

Instructions

  1. Preheat your smoker on high with the lid closed for 15 minutes. I use a Traeger so high is about 420-430 degrees.

  2. Wash and dry red potatoes, green peppers, red peppers.

  3. Chop potatoes, green peppers, and red peppers into chunks.

  4. Chop onion into chunks.

  5. Mince garlic.

  6. Put potatoes, green peppers, red peppers, onion, and garlic into a large mixing bowl. Add olive oil, butter, kosher salt, fresh ground pepper, and seasoning salt. Mix all together and pour on a sheet pan.

  7. Lightly coat pork chops with olive oil. Season with kosher salt, fresh ground pepper, and garlic powder. Place on sheet pan with veggies.

  8. Put sheet pan in smoker and smoke for about 30 minutes, or until pork chops  reach 160 degrees.

Recipe Notes

This can be cooked in the oven or in a smoker. Cook time will vary based on the thickness of the pork chops.
