Wash and dry all vegetables. Cut all vegetables in half, and peel garlic. Set your smoker to 450 degrees, I have a Traeger so that is the high setting. Preheat with the lid closed. Once your smoker reaches 450 degrees place Tomatoes, JalapeƱo, Red Onion, and Garlic directly on the grill. Close lid and grill for 5 minutes, then lower to smoke, which on my Traeger ranges from 150-180. Let smoke for 1 hour. Remove and add all ingredients to blender. Pulse for 2-3 seconds at a time, shake the blender jar as needed to ensure a thick uniform consistency.
