Smoked Glazed Pork Chops

Ingredients

  • 4-6 Pork Chops thick cut
  • 1 tbsp garlic powder
  • 1 tbsp dry mustard
  • 1 tbsp chili powder
  • 1 tbsp fresh ground black pepper
  • 1 tbsp dried oregano
  • t tsp ground cayenne pepper
  • 1 tbsp onion powder
  • 1.5 tbsp kosher salt
  • 2 tbsp dried parsley
  • 2 tbsp brown sugar firmly packed
  • 2 tbsp paprika
  • 2 tbsp olive oil
  • 1/2 cup ketchup for the glaze
  • 1/4 cup cider vinegar for the glaze
  • 1/4 cup brown sugar for the glaze

Instructions

  1. Mix all the ingredients together in a mixing bowl (except ingredients for the glaze)

  2. Coat pork chops with olive oil and rub with seasoning.

  3. Start your smoker according to your smokers guidelines. I use a Traeger, so I set my smoker to the smoke setting and allow fire to establish for about five minutes. Once your fire is established set to high, which for me is 450 degrees. Close the lid and allow to preheat for fifteen minutes.

  4. Place pork chops on the grill and close the lid. I use a probe thermometer so I don't have to open the lid until they are done cooking. Smoke until pork chop temp reaches 160 degrees, for me that's 30 minutes.

  5. While the pork chops are smoking mix the ketchup, cider vinegar, and brown sugar in a saucepan. Cook on medium heat for 3-5 minutes. Brush on to pork chops a few minutes before they are done, around the 27 minute range.

The glaze is optional. The pork chops are great with or without.
